Cook I – Beach Shops Retail Dining
Job Summary
Under the direction of the Cook II and above, the Cook I is responsible for handling, preparation, and service of foods for retail dining service operations at Beach Shops. This role primarily works with student employees, requiring a commitment to fostering a learning environment through training, leadership, and mentorship.
Essential Duties and Responsibilities
Compliance & Quality Assurance:
- Follows all Standard Operating Procedures (SOPs)
- Ensures compliance with Long Beach Health Department and OSHA regulations
- Maintains adherence to all Beach Shops policies and procedures and sets an example for team members
Food Preparation & Service:
- Ensures high-quality food is prepared and served timely, safely, and professionally
- Obtains and follows approved menus, ensuring adherence to food handling, preparation, presentation, and presentation standards
- Stores food in proper containers and maintains correct storage and holding temperatures
Food Handling & Quality Checks:
- Tests and verifies food (vegetables, animal proteins) by tasting, smelling, and testing doneness (e.g., piercing with a fork)
- Handles vegetable and animal proteins throughout various cooking stages
- Inspects culinary tools, equipment, and kitchen areas for cleanliness and sanitation
Supply & Administrative Tasks:
- Receives, verifies, sorts, and stocks supplies, inspecting deliveries for quality compliance
- Maintains food inventory records to determine preparation quantities

Training & Mentorship:
- May conduct job training for newly hired student and non-student staff on functional workplace tasks
- Promotes a learning environment through demonstrated leadership and mentorship
Additional Responsibilities:
- Adheres to campus and company sustainability initiatives, including food waste management
- Performs other related tasks as assigned by management
- Growth opportunities include performance of Cook II duties and skill mastery
Conditions of the Position
This role requires the ability to meet essential job functions, with reasonable accommodations available for individuals with disabilities.
Work Schedule
- Shifts are assigned during Retail Dining operating hours (Monday–Sunday), including mornings, afternoons, evenings, and nights.
- Aligned with CSULB Academic Calendar (peak hours during semesters, reduced during breaks).
- Minimum of 20 hours/week required during the academic semester (hours subject to operational needs).
- Occasional support may be required for campus events (evenings/weekends).
Physical Demands
The role involves:
- Frequent standing, walking, and mobility throughout the shift.
- Manual dexterity and eye-hand coordination (e.g., handling culinary tools).
- Lifting/carrying up to 50 lbs, mixing, transporting food prep tools, and setting up equipment.
- Increased physical engagement, including standing, climbing, bending, pushing/pulling, and reaching.
- Occasional kneeling or squatting as required.

Work Environment
- Dynamic, fast-paced kitchen space with limited room.
- Extreme temperature variations:
- Dining room: climate-controlled
- Kitchen: hot/humid
- Cold (refrigeration storage)
- Outdoor exposure during certain tasks.
- Noise levels range from moderate to loud (ovens, grills, equipment, staff activity).
- Potential exposure to sharp tools (knives, cutlery) and cleaning chemicals.
Minimum Qualifications
Education & Experience (Preferred)
- High school diploma or high school equivalent (preferred).
- Two years of experience as a cook in a fast-paced quick-serve restaurant (preferred).
Certifications & Licenses (Required)
- Possession or eligibility to obtain a California Food Handler Card within the first 30 days of employment.
Key Skills & Abilities
- Strong verbal and written communication skills.
- Ability to follow written and verbal safety instructions.
- Excellent teamwork and collaboration skills with a diverse population (students, staff, coworkers).
- Capacity to understand and comply with University and Beach Shops policies/procedures.
