Le Perroquet
Le Perroquet is an all-day French brasserie from Michelin-starred Chef Daniel Rose, offering classic French dishes crafted with seasonality, technique, and a sense of occasion in the heart of Mayfair. It will open at The St. Regis London, Mayfair’s newest luxury destination, located at the corner of Conduit and New Bond Street.
As a Demi Chef de Partie (Breakfast Chef), you will support the Chef de Partie in overseeing the breakfast section and ensuring the smooth delivery of exceptional morning service. You will be responsible for preparing and presenting high-quality breakfast dishes, maintaining consistency and organisation within your section, and contributing to a refined culinary experience for our guests. This role is ideal for a passionate culinary professional looking to further develop their skills within a luxury hospitality environment.
Key Responsibilities
- Prepare, cook, and present breakfast dishes according to recipes, quality standards, and presentation guidelines.
- Support the Chef de Partie in managing the breakfast section during service.
- Assist with the preparation of a wide range of breakfast offerings, including egg dishes, hot breakfast items, pastries, and continental selections.
- Ensure all mise en place is prepared and organised before the start of service.
- Maintain consistency in food quality, portion control, and presentation.
- Monitor stock levels and communicate replenishment requirements to senior chefs.
- Assist in reducing food waste through effective stock rotation and careful preparation.
- Follow all food safety, hygiene, and sanitation procedures in line with HACCP standards.
- Support junior team members and Commis Chefs by providing guidance and assistance where required.
- Communicate effectively with kitchen and Food & Beverage teams to ensure smooth service delivery.
- Ensure all workstations and kitchen equipment are clean, organised, and maintained.
- Report any maintenance issues, equipment faults, or health and safety concerns promptly.
- Assist with the preparation of special dietary meals and guest requests.

Core Competencies
We are seeking an enthusiastic and motivated individual who is passionate about hospitality and eager to develop their culinary career. You should have:
- Previous experience as a Demi Chef de Partie, Breakfast Chef, or similar role within a high-quality, luxury, or fine dining environment.
- Experience working on a breakfast section or preparing breakfast menus.
- Strong knowledge of food preparation techniques and kitchen operations.
- Passion for quality ingredients, presentation, and guest satisfaction.
- Good organisational and time-management skills.
- The ability to work efficiently under pressure while maintaining attention to detail.
- Knowledge of food safety and hygiene standards (HACCP).
- Strong communication and teamwork skills.
- Flexibility to work early morning shifts, weekends, and public holidays as required.
- A positive attitude and commitment to continuous learning and development.
