Job Role Description
The Deputy General Manager of Fonn Mór plays a key role in supporting the General Manager to deliver exceptional guest experiences, lead the team and drive commercial performance. We are looking for a passionate, hands-on hospitality leader with strong operational experience, excellent people management skills and a commitment to maintaining the highest standards across service, food and drink.
Nestled around the corner from the main entrance is the newly opened Fonn Mór; a piano bar and casual eatery that gives fans of the Oran Mor a more intimate and relaxed experience, but with all the aesthetic touches and quality service you’d expect in the heart of the building. A classically cool wine and piano bar that serves up small plates, cocktails and late night music in the heart of the old vestry.

The ideal candidate will come from a strong restaurant and wine background, be passionate about delivering outstanding guest experiences, and have the ambition and leadership skills to shape the future of one of Glasgow's most exciting hospitality venues.
Roles And Responsibilities
- Take full operational ownership of Fonn Mór, ensuring the highest standards of service, presentation and guest experience.
- Lead, motivate and develop the management and front-of-house teams to create a high-performing culture.
- Drive revenue growth and profitability through strong commercial decision-making and operational excellence.
- Work closely with the Executive Chef to develop menus that reflect seasonal trends and maximise commercial performance.
- Develop and grow Fonn Mór's wine programme, ensuring an engaging and profitable drinks offering.
- Recruit, train, coach and retain exceptional team members while creating clear development pathways.
- Analyse sales, GP and KPI performance, implementing action plans to drive continual improvement.
- Handle customer inquiries, complaints, and feedback, ensuring swift and effective resolution.
- Lead by example on the floor, maintaining a visible management presence during service.
- Identify opportunities to grow Fonn Mór's reputation, increase covers and establish it as a leading restaurant and bar destination in Glasgow's West End.
- Work collaboratively with the General Manager and wider Òran Mór leadership team to support business-wide objectives.
