Duties and Responsibilities
Leading Kitchen Operations
- Supervises kitchen staff, coordinating food preparation activities.
- Leads shifts, personally executing food requests to meet high specifications.
- Uses interpersonal and communication skills to:
- Lead, influence, and motivate teams
- Advocate financial/business decision-making
- Demonstrate honesty and integrity
- Set a positive example for associates
- Fosters teamwork, building mutual trust, respect, and cooperation.
- Ensures associates understand job expectations and parameters.
- Maintains productivity standards and ensures alignment with company policies.
- Communicates clear performance expectations.
- Recognition of top performance and achievement of desired results.
Food Preparation and Quality Control
- Designs menus, ensuring proper portion sizes, plating, and garnishes.
- Ensures accurate food portioning to minimize waste.
- Monitors kitchen operations to guarantee food quality and reports suppliers on non-compliant products.
- Coordinates inventory ordering based on business forecasts and adjusts as needed.
- Collaborates with F&B Front of House to enhance guest service and menu knowledge via daily taste panels.
Standard Compliance
- Ensures all dishes include full specifications (including photos and allergen info).
- Sign-offs on culinary training per associate before menu implementation.
- Maintains kitchen equipment for efficiency and compliance with food hygiene/health and safety standards.
- Reports all maintenance issues promptly to F&B Director & Engineering.

Performance Management
- Daily oversight of back-of-house operations to uphold service excellence.
Safety, Compliance, and Policies
- Adheres to all company safety, security, and operational policies.
- Reports maintenance needs, accidents, injuries, and unsafe conditions immediately.
- Completes required safety training and certifications.
- Ensures uniforms and grooming standards are maintained profDraft.
- Protects company confidentiality on sensitive information.
- Promotes professional communication and positive relationships within the team.
Preferred Qualifications
- Education: High school diploma or GED equivalent.
- Experience: At least 3 years as a Sous Chef (related work experience preferred).
