About the Role

We are seeking an experienced and talented Executive Chef to lead our kitchen team at Seaton House, St Andrews. Reporting to the General Manager, you will take full ownership of the kitchen department, delivering brand standards, budgeted profitability, and an exceptional dining experience for our guests.

What You'll Do

  • Take ownership of the kitchen department, ensuring brand values and standards are consistently delivered.
  • Oversee daily kitchen operations, including food production, preparation, and presentation.
  • Create and update menus, ensuring variety, innovation, and adherence to dietary restrictions and preferences.
  • Own departmental financial performance, including food gross profit, stock levels, and payroll costs, in line with forecasted business levels.
  • Manage inventory, including ordering, receiving, and stock rotation, in line with company policy.
  • Train, supervise, and mentor kitchen staff, supporting their professional development and playing a key role in succession planning for the department.
  • Recruit departmental team members up to supervisory level, in line with company policy.
  • Ensure compliance with food safety, health and safety, and hygiene standards, including regular review of hygiene audits.
  • Identify and implement promotional opportunities to enhance departmental sales and exceed budget.

What We're Looking For

  • Previous hospitality or catering experience in a kitchen environment.
  • Previous team management and coaching experience.
  • Food Hygiene Level 3 Certificate (or equivalent) / NVQ Level 1-2 in Food Preparation.
  • Strong leadership skills with a genuine passion for training and team development.
  • Excellent communication skills, with a good understanding of written and spoken English.
