About the location:

Set in the heart of the City, overlooking Tower Bridge and the Tower of London, Tower Bridge is the starting point for discovering London’s historic past, alongside its exhilarating present. As impressive inside as out, this famous five-star hotel remains the centre of attention, as a new chapter begins in its history. This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 8 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including Cooper's Cut (Modern Steakhouse), Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar)

Four Seasons Hotel London at Tower Bridge is seeking an exceptional Executive Pastry Chef to lead our pastry operation. This is a rare opportunity for a creative and inspiring culinary leader to shape the pastry vision of one of London's most prestigious luxury hotels while developing a high performing team and delivering excellence across multiple outlets.

The role

As Executive Pastry Chef, you will be responsible for the leadership, direction, and performance of the pastry department across the hotel.

You will oversee all pastry production, including restaurants, afternoon tea, banqueting, in room dining, amenities, and special events. Working closely with the Executive Chef and Food and Beverage leadership team, you will drive innovation, consistency, quality, and commercial performance while maintaining the highest culinary standards.

This role requires a balance of creativity, leadership, operational excellence, and commercial awareness. We are looking for someone who can inspire a team, elevate the guest experience, and continue to evolve the hotel's pastry offering.

What you will do

  • Lead and develop the pastry team, creating a culture of excellence, collaboration, and continuous learning
  • Set the strategic direction and vision for all pastry operations across the hotel
  • Design and oversee dessert, afternoon tea, amenity, and seasonal menus
  • Maintain exceptional standards of quality, consistency, and presentation across all pastry offerings
  • Work closely with restaurant, banqueting, and Food and Beverage teams to deliver memorable guest experiences
  • Identify opportunities for innovation and continuously evolve the pastry offering in line with market trends and guest expectations
  • Manage labour, food cost, purchasing, and inventory to achieve departmental financial goals
  • Ensure compliance with all food safety, hygiene, and HACCP standards
  • Develop talent and succession plans within the pastry team
  • Support hotel events, special occasions, and high profile VIP experiences

What we are looking for

  • Previous experience as an Executive Pastry Chef or a Senior Pastry Chef leadership role within a luxury hotel, fine dining, or high profile hospitality environment
  • Strong leadership and people development skills
  • Exceptional pastry technique and creativity
  • Experience overseeing multiple pastry outlets and service styles
  • Strong understanding of financial management, food costs, labour management, and operational planning
  • Passion for innovation, quality, and guest experience
  • Excellent organisational and communication skills
  • Ability to perform effectively within a fast paced luxury environment
  • Positive, collaborative, and inspirational leadership style
  • Right to Work in the UK
