About The Role
As Executive Pastry Chef at Corinthia London, you will lead our Bakery & Pastry operation across:
- Fine dining desserts and decadent afternoon teas
- Artisan bakery products
- Special event creations and bespoke guest requests
This role anchors the hotel’s culinary identity, contributing to its reputation, awards, and exceptional guest experiences.
Key Responsibilities
- Creative Direction: Shape the pastry vision, innovating desserts and concepts that reflect Corinthia’s five-star positioning.
- Team Leadership: Oversee a skilled team of chefs, bakers, and patissiers, fostering a culture of precision and passion.
- Quality Assurance: Ensure every creation meets the highest standards of flavour, presentation, and texture.
- Menu Development: Collaborate to design pastry menus that align with seasonalferences and guest expectations.
- Operational Excellence: Optimise kitchen workflows, cost control, and resource allocation to sustain profitability.
- Executive Engagement: Represent the team and assets in meetings with senior hospitality leaders and high-profile clients.
- Special Projects: Lead innovative concepts, such as chef’s desserts for private events or signature collaborations.
About You
Professional Qualifications & Experience
- Senior Pastry Leadership: Proven management experience in luxury 5-star hotels, Michelin-starred restaurants, or high-end pastry kitchens.
- Expertise: Advanced skills in desserts (including chocolate and sugar work) and bakery fundamentals. An understanding of traditional and modern French/Swiss pastry techniques.
- Cost Management: Experience monitoring budgets, portion control, and ingredient costs in high-volume environments.
- Regulatory Compliance: Food Safety Level 2 Certificate (or equivalent accreditation) and working knowledge of HACCP and COSHH regulations.
