Executive Sous Chef - Locke Canary Wharf

A brand new kitchen. A blank canvas. We are looking for the leader to help build it from day one.

We are opening the doors at Locke Canary Wharf, and food sits right at the heart of the plan. As our founding Executive Sous Chef, you will not be stepping into someone else's kitchen, you will be helping to shape it. From the first menu to the first service, you are the right hand to the Head Chef and the driving force behind the pass in one of London's most dynamic districts, working with a group that is genuinely reinventing what modern hospitality can be.

This isn't a role where you inherit the way things are done. This is a new opening, which means you get to set the standards, build the brigade, and help define the culture of the kitchen from scratch. If you have always wanted the chance to make a kitchen truly your own, this is it.

We are White Rabbit Hospitality, and we do things differently. Hospitality is at our core, we do the right thing, we pursue excellence, and we are all entrepreneurs. Our ethos is simple: work hard and be kind.

Our Values, In Every Service:

  • HOSPITALITY IS AT OUR CORE - You lead a kitchen that exists to delight guests, plate after plate, shift after shift.
  • WE DO THE RIGHT THING - You uphold hygiene, safety, and food standards without compromise, and hold your team to the same.
  • WE PURSUE EXCELLENCE - You obsess over consistency, seasoning, and presentation, and you never settle for good enough.
  • WE ARE ALL ENTREPRENEURS - You think like an owner, controlling costs, reducing waste, and driving the kitchen forward.

I’m in my final year doing Economics and I don’t know whether to apply for grad schemes now or do a masters first. What do you think?

Honest answer — it depends on where you want to end up. A lot of top grad schemes (Big 4, civil service, banking) don’t need a masters. Let’s look at the ones you’d be competitive for now, and we can decide if a masters actually adds anything.

Also worth knowing: most autumn 2026 applications are open now. Timing matters more than you think.

Start with a chat, not a search bar

Grad scheme, placement, apprenticeship? Not sure what you want yet — that's fine. Your agent talks it through with you and turns "I have no idea" into a shortlist.
