The Duke of Cornwall Hotel is one of Plymouth’s most iconic and historic hotels. Dating back to 1863, the hotel was created as the city’s first luxury hotel and still carries the character, grandeur and charm of its Victorian heritage today. With 72 individually styled bedrooms, event spaces, weddings, private functions and a strong connection to Plymouth’s maritime history, the Duke is a hotel with real personality. As the hotel prepares to reopen following improvement works, this is an exciting opportunity to be part of relaunching a much-loved Plymouth landmark and shaping the next chapter of its Food & Beverage operation.

We are looking for an experienced Food & Beverage Manager to help lead the next chapter of this historic hotel. This is a fantastic opportunity to build and shape a high-performing team, deliver exceptional guest experiences, and play a key role in relaunching one of Plymouth's best-known hotels. We're aiming for a start date in late August or early September, with a two-stage interview process beginning with an initial interview via Microsoft Teams.

As Food & Beverage Manager, you’ll play a key role in bringing the Duke’s restaurant, bar, events and guest experience back to life. You’ll lead the team, drive service standards, support commercial performance and work closely with the kitchen, sales and operations teams to deliver memorable experiences for hotel guests, local visitors, meetings, events and celebrations.

The Duke of Cornwall hotel is managed by RBH hospitality management.

A DAY IN THE LIFE OF A FOOD & BEVERAGE MANAGER AT OUR HOTEL

  • Lead the day-to-day running of the restaurant, bar, events and private dining areas, ensuring service is smooth, welcoming and delivered to a high standard.
  • Support the reopening of the Duke of Cornwall Hotel by building strong service standards, team routines and guest-focused ways of working.
  • Manage and motivate the Food & Beverage team, providing clear direction, feedback and support throughout each shift.
  • Work closely with the Head Chef to ensure food service is well planned, commercially focused and delivered consistently across breakfast, lunch, dinner, weddings, events and functions.
  • Oversee the successful delivery of F&B element of conferences, meetings, weddings, private events and special occasions, ensuring guest expectations are understood and exceeded.
  • Hold daily service briefings, making sure the team are clear on guest requirements, allergens, service standards, upselling opportunities, daily targets and operational priorities.
  • Monitor guest feedback and respond quickly to any concerns, using feedback to improve service standards and create memorable guest experiences.
  • Drive Food & Beverage revenue by encouraging upselling, reviewing average spend, supporting promotional activity and creating team incentives to improve performance.
  • Review stock, wastage, beverage pricing and cost controls, working with the kitchen and senior management team to protect profit without compromising quality.
  • Build strong relationships with Front Office, Housekeeping, Sales and Kitchen teams to ensure communication is clear and the guest journey feels seamless from arrival to departure.

What We Need From You

  • Previous Food & Beverage management experience within a hotel, restaurant, events or hospitality environment.
  • A confident leader who can motivate, develop and support a team through a busy reopening period and beyond.
  • Strong operational knowledge of restaurant, bar, breakfast, weddings, conferences and event service.
  • A commercial mindset, with experience driving sales, upselling, controlling costs and improving average spend.
  • Excellent communication skills, with the ability to work closely with the kitchen, sales, front office and wider hotel teams.
  • A guest-focused approach, with high standards and the confidence to resolve issues quickly and professionally.
  • Good knowledge of licensing, food safety, allergens and health and safety requirements.

OUR INTERVIEW PROCESS

Our interview process will take place over two stages.

  • The first interview will be held via Microsoft Teams, giving us the opportunity to get to know you and talk through your experience, leadership style and interest in the role.
  • The second interview will take place in person at the hotel, where you’ll have the chance to meet members of the team and learn more about the reopening plans for the Duke of Cornwall Hotel.
