At Nobu Hotel London Portman Square, food and drink are at the heart of the guest experience. As F&B Operations Manager, you will oversee the day-to-day operation of our restaurants, bars, events and in-room dining, ensuring every guest enjoys a seamless and memorable experience.
Working closely with the Hotel Manager and senior leadership team, you’ll inspire and develop your team, drive commercial performance and continuously elevate service standards across our Food & Beverage operation.
You will
- Lead the daily operation of our all-day dining restaurant, bar, events and in-room dining outlets, ensuring exceptional service standards throughout.
- Drive revenue growth by analysing performance, identifying opportunities and supporting upselling initiatives across all F&B outlets.
- Manage budgets, forecasts, labour costs and inventory to ensure strong commercial performance.
- Support hotel projects, events and new initiatives, bringing fresh ideas and an innovative approach to operations.
- Work closely with Culinary, Marketing and other hotel departments to maximise guest satisfaction and business success.
- Lead, coach and develop your team, creating a high-performing culture focused on service excellence and career progression.
- Monitor guest feedback and reviews, identifying opportunities to improve the guest experience.
- Maintain compliance with all licensing, health & safety and operational standards.
- Oversee Operationg Procedure development, operational standards and continuous improvement across the F&B division.
- Act as an ambassador for Nobu values of Family, Crafted, Smile and Kokoro in every interaction.

You are an experienced Food & Beverage leader with a passion for hospitality, people development and commercial performance. You thrive in a fast-paced luxury environment, balancing operational excellence with creative thinking and strong leadership. Confident managing multiple outlets, you enjoy building motivated teams, enhancing guest experiences and driving business results.
