F&B Performance Manager

Location & Remuneration

Welcome Break Support Centre, Newport Pagnell, Milton Keynes, Buckinghamshire, MK16 9EZ Salary: up to £45,000 per annum plus bonus scheme, benefits, and discounts


About the Role

The F&B Performance Manager is a key role within our Hotels Commercial Team, responsible for driving revenue, profitability, and trading performance across Food & Beverage (F&B) and ancillary categories, including:

  • Breakfast
  • Other food
  • Liquor
  • Pizza
  • Retail

The role offers hybrid working, with mandatory visits to our Newport Pagnell Support Centre and regular travel to hotel sites nationwide across the UK.

Reports to the Director of Commercial Strategy – Hotels and collaborates closely with Operations and wider commercial teams to leverage data and insights in driving performance across our hotel estate.


Key Responsibilities

Core Duties

  • Track performance against budget, historical data, and targets for all F&B and ancillary categories
  • Identify revenue and margin opportunities by site, channel, and product category
  • Improve breakfast conversion, upsell performance, and optimise channel mix
  • Support pricing strategies and promotional activities across:
    • Food
    • Liquor
    • Pizza
    • Retail
  • Review and analyse GP%, product mix, wastage, and margin performance
  • Develop clear reporting and trading insights to support weekly and monthly reviews
  • Collaborate with Operations to translate insights into practical site-level actions
  • Promote digital adoption via:
    • QikServe platforms
    • Kiosks
    • WhatsApp
    • Pre-arrival touchpoints
    • Online channels
  • Lead regular performance reviews and provide data-driven commercial recommendations

  • Enhanced visibility of performance across breakfast, food, liquor, pizza, and retail

Core Competencies & Requirements

Essential Skills & Experience

  • Strong commercial, revenue, or trading performance management experience in:
    • Hotels/business hospitality
    • F&B or retail-led environments
  • Deep understanding of F&B trading drivers, including:
    • Sales and conversion optimisation
    • Margin and product mix management
    • Pricing and promotional strategies
  • Advanced analytical skills to assess site, channel, and category performance data
  • Cross-functional collaboration with Operations and Commercial teams to drive performance improvement
  • Commercial acumen, balancing revenue growth, margin goals, and operational feasibility
  • Proficiency in Microsoft Excel and advanced reporting capabilities
    • Ability to compile weekly/monthly performance insights for reviews
  • Adaptability to thrive in a fast-paced, multi-priority environment, with a focus on high-impact opportunities
  • Full driving licence is mandatory
