Pay

Up to £45,000 plus fantastic benefits, bonus scheme & discounts

The Role

The F&B Performance Manager role is a key role within our Hotels Commercial Team, focused on driving revenue, profitability and trading performance across our F&B and ancillary categories, including breakfast, other food, liquor, pizza, and retail.

This role offers hybrid working, with a requirement to commute to our Newport Pagnell Support Centre and travel regularly to hotel sites across the UK.

This role reports to the Director of Commercial Strategy – Hotels and works closely with Operations and wider commercial teams to use data, insight, and trading analysis to identify opportunities, improve conversion and margin, strengthen digital channel performance, and turn performance insight into clear, practical action across the hotel estate.

What You’ll Do

  • Track F&B performance versus budget, last year, and target.
  • Identify revenue and margin opportunities by site, channel, and product category.
  • Improve breakfast conversion, upsell performance, and channel mix.
  • Support pricing offers and promotional activity across food, liquor, pizza, and retail.
  • Review GP%, product mix, wastage, and margin performance.
  • Build clear reporting and trading insight for weekly and monthly reviews.
  • Work with Operations to turn insight into practical site-level action.
  • Support digital adoption across QikServe, kiosks, WhatsApp, pre-arrival touchpoints, and online channels.
  • Lead regular performance reviews and recommend clear commercial actions.

Performance in the role will be measured through:

  • Delivery of revenue growth across F&B and ancillary categories.
  • Improved conversion, GP%, and product mix performance.
  • Clearer trading actions by site and category.
  • Stronger adoption of digital and upsell channels.
  • Better visibility of performance across breakfast, food, liquor, pizza, and retail.

Core Competencies

  • Strong commercial, revenue, or trading performance management experience in hotels, hospitality, F&B, or retail-led environments.
  • Strong understanding of F&B trading drivers, including sales, conversion, margin, product mix, pricing, and promotional performance.
  • Highly confident analyzing site, channel, and category performance data and using insight to identify actions that improve results.
  • Experience working cross-functionally with Operations and Commercial teams to influence decisions and drive performance improvement.
  • Commercially strong, with the ability to balance revenue growth, margin delivery, and operational practicality.
  • Advanced Excel and reporting capability, with experience producing clear trading insight for weekly and monthly performance reviews.
  • Comfortable operating in a fast-paced environment, managing multiple priorities, and maintaining focus on the highest-value opportunities.
  • A full driving licence is required for this role.
