Oplu is leading the search for an F&B & Wine Service professional to join the hospitality team at a distinguished luxury country hotel, vineyard, and retreat in West Dorset.
This is a hands-on service leadership role covering three connected remits: F&B service and promotion, Wine service and sales (in-house, cellar door, and wholesale), and Activities / Experiences / Events. The successful candidate will cover for the Head of F&B in their absence and take full ownership of the Wine Tasting Room.
Staff accommodation is available in nearby Bridport for candidates relocating.

The role
- Lead F&B service delivery across breakfast, lunch, dinner, and events
- Full responsibility for the Wine Tasting Room (cleanliness, presentation, security)
- Wine service, education, and sales — in-house, cellar door, and wholesale
- Upsell food, drink, activities, and events to drive revenue
- Cover for the Head of F&B in their absence (service, training, team, rota, stock)
- Take payments in line with Financial Procedures
- Health & Safety Competent Person on shift
The brief
- Prior senior F&B, sommelier, or wine service experience at a boutique or luxury property
- APLH (Personal Licence Holder) qualification (or willingness to complete)
- Basic Food Hygiene, HACCP, Manual Handling (or willingness to complete)
- Full driving licence and own car
- Weekend and evening shift availability
- Right to live and work in the UK

Compensation: £30,000-£35,000 per annum (dependent on experience). Staff accommodation available in nearby Bridport.
