About the Role
LSG Capital own and operate Stay Hush, a 21-room boutique aparthotel, with Mile Yard restaurant & bar at street level. Stay Hush’s flagship, featuring the award-winning POCCA food concept, sits off the Royal Mile.
This isn’t just hotel F&B—it’s an aparthotel experience where local Edinburgh residents and guests alike mix effortlessly. We’re looking for a Floor Manager to support the Venue Manager in nurturing a lively, welcoming atmosphere while maintaining seamless operations.
Key Details
- Salary: £29,000 per year
- Location: In person, Old Town Edinburgh

Role Overview
You’ll be the Venue Manager’s Right Hand, leading shifts, managing teams, and delivering an exceptional guest experience. The role blends hospitality leadership with hands-on operations, ensuring food and service quality, team development, and commercial success.
What You’ll Be Doing
Shift Leadership
- Lead breakfast, lunch, and dinner shifts with confidence and clarity
- Brief the team with positive energy to drive productivity and mood
- Maintain a fast, smooth service across bar, floor, and kitchen prep
- Train and support team members in service standards
- Step in for the Venue Manager when needed

Operations
- Oversee daily operations at both Mile Yard (street-level) & POCCA (pocket food concept)
- Work alongside the team to prep and serve Focaccia sandwiches and other offerings
- Ensure consistent food quality, presentation, and service standards
- Maintain food safety, licensing, and H&S compliance
- Assist with rostering, stock control, and wastage reduction
- Coordinate room service delivery from kitchen to Stay Hush apartments
Guest Experience
- Foster an authentic, human connection—no stiff scripts, just warm hospitality
- Recognise returning locals and apartment guests, making them feel at home
- Handle guest feedback proactively to enhance satisfaction
- Create an atmosphere where guests love staying longer
Commercial Support
- Help the Venue Manager hit revenue goals through dynamic promotions
- Sell F&B packages, upsells, and in-apartment meals to apartment guests
- Boost visibility for themed events, special nights, and promotions
- Generate ideas to activate slower trading periods
- Support events, collaborations, and community engagement
Community & Energy
- Actively shape events, pop-ups, and partnerships to build a neighbourhood feeling
- Represent Stay Hush and POCCA authentically in the local scene

What We’re Looking For
Professional Experience
- Proven supervisory or Assistant Manager experience in a high-volume bar or restaurant
- Ability to run independent shifts efficiently
- Hands-on experience with food prep, plating, and beverage service
Key Competencies
- Strong organisational skills with attention to detail
- Excellent communication, captains relevant to fast-paced dining
- Commitment to service standards, compliance, and health & safety
Personal Attributes
- Grounded yet energetic, truly plate to genuine hospitality
- Soft leadership: Calm under pressure, clear and supportive
- Detail-orientated with a passion for creating something meaningful
