Join the Team at New Lanark Mill Hotel

New Lanark Mill Hotel is a unique four-star hotel located within the UNESCO World Heritage Site of New Lanark. We pride ourselves on delivering genuine Scottish hospitality, whether welcoming guests to our restaurant and bar, hosting weddings and celebrations or providing memorable stays for leisure and business visitors.

We're looking for an experienced, enthusiastic and hands-on Food & Beverage Manager to lead our Food & Beverage operation and become part of our Senior Management Team.

This is not a role for someone who wants to manage from an office. It's for someone who enjoys being part of the operation, supporting their team during busy services, getting to know guests and taking pride in delivering consistently excellent hospitality. We're not looking for just any candidate, we're looking for the right person. Someone who shares our values, enjoys developing people and wants to play an important role in the continued success of our hotel.

About the Role

The heart of our Food & Beverage business is our restaurant, bar and lounge, which you'll lead on a daily basis. Alongside this, you'll oversee the operational delivery of weddings, private events and functions throughout the year, ensuring every occasion is delivered professionally and to the high standards our guests expect. You'll also take responsibility for the commercial performance of the department, managing labour, stock, margins and service standards while continuing to develop a motivated and engaged team.

As a member of the Senior Management Team, you'll participate in our Duty Management rota and work closely with the General Manager and Heads of Department to continually improve the guest experience across the hotel. This is a genuinely hands-on management role. There will be times when you'll support the team by helping in the restaurant or behind the bar, leading by example and ensuring our guests always receive outstanding service.

Key Responsibilities

Operational Leadership

  • Lead the day-to-day operation of the restaurant, bar and lounge.
  • Ensure consistently high standards of guest service.
  • Oversee the successful delivery of weddings, private functions and events.
  • Maintain high standards of presentation, cleanliness and compliance.
  • Support the team during busy periods by leading from the front.

Commercial Management

  • Manage labour costs in line with business levels.
  • Control beverage stock and maintain healthy gross profit margins.
  • Complete stocktakes and produce accurate EPOS and management reports.
  • Identify opportunities to improve sales, efficiency and profitability.

Team Leadership

  • Recruit, train and develop the Food & Beverage team.
  • Coach supervisors and support future talent within the department.
  • Create a positive, accountable and supportive working environment.
  • Lead regular team meetings and performance reviews.

Hotel Leadership

  • Participate in the hotel's Duty Management rota.
  • Work collaboratively with all departments.
  • Contribute ideas that improve service, efficiency and the overall guest experience.

About You

You'll already have experience managing a hotel Food & Beverage operation and will understand the importance of balancing exceptional guest service with strong commercial performance.

You'll enjoy being part of the operation, supporting your team and creating a positive working environment where people can develop and succeed.

We're looking for someone who has:

  • Previous Food & Beverage management experience within a hotel or quality hospitality venue.
  • Strong operational knowledge of restaurants and bars.
  • Experience delivering weddings, banqueting or private events.
  • Good commercial awareness, including labour management, stock control and gross profit.
  • Experience using EPOS systems and producing management reports.
  • Excellent leadership and communication skills.
  • A genuine passion for hospitality and developing people.

What We Offer

  • £15.00–£16.00 per hour (approximately £35,100–£37,440 per annum based on a 45-hour working week), dependent on experience.
