Who We Are Dallas Burston Polo Club is an exceptional destination set within 600 acres in the heart of Warwickshire. Combining luxury hospitality with world-class equestrian facilities, the club offers a unique guest experience across dining, events, and accommodation. With a 41-bedroom hotel (expanding to 129), a vibrant clubhouse, and a growing events calendar, we are building something truly special—and our Food & Beverage offering sits at the heart of that experience.

Job Overview
As Food & Beverage Manager, you will play a pivotal role in delivering exceptional guest experiences by leading the daily operations of our Hotel Restaurant, Bar outlets, and conference spaces. This role is crucial for upholding our commitment to Integrity by ensuring consistent, high-quality service standards are met, leveraging Expertise in managing departmental costs, and fostering Partnership across the wider hotel team. Reporting to the Operations Manager / General Manager, you will encourage a collaborative and successful environment for both guests and team.
Key Accountabilities
Guest Experience & Service Leadership
- Ensure service standards are maintained by creating a positive and exceptional guest experience (People First).
- Host weekly staff briefings to foster open communication and partnership within the team.
- Empower team members to handle guest feedback, recording it accurately to demonstrate responsiveness and People First approach.

Operational Integrity & Accountability
- Implement and manage standard control checklists to uphold Consistency and Accountability (Integrity).
- Address complaints proactively (prevention, recovery, and investigation) while ensuring Fairness and Transparency (Integrity).
- Maintain Cleanliness and Safety in the restaurant to protect both guests and team (Integrity and Guest Welfare).
Staff Management & Development
- Ensure team compliance with Company Standards (uniform, punctuality, and hygiene).
- Train, mentor, and develop team members to improve service and foster a Supportive Culture.
- Conduct regular appraisals and promotional opportunities for Career Progression.
Financial & Commercial Responsibility
- Monitor Wastage and Breakages, reporting discrepancies to Senior Management.
- Reconcile Cash Takings, investigating discrepancies, and maintaining Financial Accuracy (Integrity).
- Control operating costs while adjusting Payroll Costs based on business demands (Expertise).
Experience & Facility Enhancement
- Review and redesign Menus in collaboration with senior management.
- Oversee Restaurant & Bar Equipment, reporting faults for prompt resolution.
- Identify Market Trends and growth opportunities to Boost Revenue and Profitability.

Emergency & Compliance
- Ensure Fire Safety Awareness and adherence to Statutory Procedures.
- Draft Optimal Rosters using the online portal to maintain staffing efficiency.
Recruitment & Team Dynamics
- Lead recruitment, including interviews with prospective candidates.
- Develop Induction Programs for new hires and conduct regular check-ins for performance support.
- Address conflicts through Coaching, Mentoring, and Feedback.
What We’re Looking for
- Proven experience in Food & Beverage Manager or Senior Leadership Roles.
- Expertise in Team Management, Rotas, and High-Service Environments.
- A passion for delivering Exceptional Guest Experiences.
- Strong Collaboration Skills, particularly with Kitchen and Operational Teams.
- Commercial Awareness with revenue-driving and cost-control responsibilities.
- A Hands-On, Leadership Mindset, thriving on engagement with teams.
