General Manager – Quality British Fresh Food Concept
The restaurant is a new, exciting concept offering table service and fresh food, with weekly sales targets between £30,000 and £55,000+ (peak summer sales exceeding £50,000). The venue boasts a large garden and operates year-round with a seasonal menu and extended trading hours—serving breakfast, lunch, dinner, and late-night bites.
About the Role
Our client is a leading operator across the UK, renowned for delivering quality fresh British food. As the first site of a brand-new concept, this is an opportunity for the successful candidate to shape the business from the ground up.
As the General Manager, you will oversee every aspect of operations, from menu development and stock control, to team recruitment, training, and profit dimensions. Success hinges on your ability to craft business growth strategies and ensure financial accountability.
Key Attributes Needed:
- Deep experience in quality pubs, balancing wet & dry sales effectively
- Knowledge of seasonal trends, from ingredients to menu rotation
- Strong financial acumen with hands-on P&L responsibility
- Leadership with recruitment, training, and talent development skills
- Marketing savvy to drive business growth
- Genuine passion for food, paired with flexible hours and a strong work ethic

Responsibilities
- Operational Excellence: Ensure smooth daily operations, from trade during busy hours to supporting a table-service model
- Menu Innovation: Collaborate on a dynamic seasonal menu—you’ll need creative flair and commercial instinct
- Team Management: Recruit, train, and develop a cohesive team capable of delivering exceptional service
- Finance & Profit: Drive weekly targets by optimising profit margins and sales velocity
- Customer Experience: Foster loyalty through top-tier service, whether in a bustling pub or serene garden setting
- Business Development: proactively seek ways to expand and elevate the brand
Requirements
- Proven General Manager experience, ideally in hospitality settings
- Acute understanding of wet & dry sales, with stock control mastery
- Track record of team leadership—able to build high-performing crews
- Seasonal savvy in sourcing, pricing, and stock rotation
- Vitality & Committment: Passionate about food, service, and commercial success
- Availability to work flexible hours
- Eligibility to work in the UK (mandatory)
