General Manager: Roll Boys

About Roll Boys

We make cinnamon rolls. Really good ones.
But more than that, we're building something. A brand that turns a simple thing into a moment worth having. We operate across two sites, we're growing fast, and we're looking for the person who's going to run the ground operation while we do it.

This isn't a role for someone who wants to maintain. It's for someone who wants to build.

Who You Are

You're a hospitality operator and leader first. You don't wait to be told what's broken, you've already fixed it. You hold yourself to a standard most people wouldn't ask of you, and you bring your team up to meet it.
You're also someone who genuinely cares. About the product. About the people making it. About the customer who's about to eat it. That care is non-negotiable at Roll Boys.
As a leader, you see opportunity where others see gaps. You love getting in early, building something from the ground up, and leaving your mark on how it grows. That's exactly what this role offers.
You'll report directly to the founder. Early on, we'll work closely together. Over time, the operation becomes yours to run.

What You'll Own

The Operation
Run both sites. Production Kitchen and Residency. Open, close, and everything in between. Build the systems that make us consistent, then hold the team to them.

The Product
Own quality from the first batch of dough to the last roll served. Nothing leaves either site that isn't right. You have full authority to pull product and the responsibility to use it.

The People
Hire well. Onboard properly. Brief the team every shift, coach them when they're off, and recognise them when they're not. Build a team that cares about Roll Boys as much as you do.

The Sites
Stock, supplies, equipment, transfers between kitchens, food safety, H&S you own the infrastructure that makes both sites run. Nothing falls through the gap between sites on your watch.

The Numbers
Daily reconciliation, waste tracking, stock counts, cost awareness. You don't need to be a finance person but you need to understand what moves the dial and manage within the budget.

Who We're Looking For

  • 2+ years managing a team in a fast-paced food, bakery, or hospitality environment
  • Someone who builds systems, not workarounds
  • A people manager who coaches first and escalates when it's earned
  • Grounded knowledge of food safety and what EHO-ready actually means
  • Calm when two things go wrong at the same time, because they will
  • Genuinely excited by the brand, product and what we're building
  • Multi-site experience and bakery or production kitchen exposure are a big plus.

Salary: £45,000 pa
