McCabe & Barton is partnering with a leading insurance business to hire an Artificial Intelligence Engineer for a hands-on role focused on building and deploying practical AI solutions across the organisation.
This is an opportunity to work on real-world Generative AI use cases, including copilots, chatbots, document intelligence tools and LLM-driven workflows, within a regulated insurance environment. The role will suit a pragmatic engineer who can move beyond proof of concept and deliver secure, scalable and production-ready AI solutions.

Key experience required:
- Strong Python and backend engineering experience
- Hands-on experience with OpenAI and/or Anthropic Claude APIs
- Practical experience with prompt engineering and LLM application development
- Experience with RAG, embeddings and vector databases
- Google Cloud Platform experience, ideally including Vertex AI
- Familiarity with CI/CD, Docker and modern cloud architecture
- Ability to work with both structured and unstructured data
- Strong understanding of security, scalability and production-readiness
