Company Description

We’re on the hunt for a charismatic and experienced Head Bartender to join our team at Rondo, The Hoxton Holborn.

A relaxed yet sophisticated neighbourhood restaurant, Rondo serves seasonal, modern bistro dishes and an exceptional wine list—ideal for a site best devoted to your corner of the block. We thrive on serious food and drink, but with a fun, welcoming vibe that makes it feel like the restaurant you’ve always dreamed of being your local.

Holborn was the second Hoxton Hospitality (The Hox) destination to open, making it home within a stunning Grade II-listed former factory—originally George Kent’s gadget-making workshop (including a knife sharpener/cleaner now in the Science Museum). Later home to British Telecom, today it houses 220 bedrooms (expanding from the original 174), the Apartment, plus Rondo, nestled alongside the capital’s most exciting shopping and entertainment hubs.

Rondo under Chef Tristan Downes is the kind of place you wish was at the end of your street—seasonal, locally inspired dishes, unexpected ingredients, and a wonderfully curated wine list. It’s all about creating great experiences, great tastes, and a welcoming atmosphere.

Job Description

You’ll be responsible for leading the bar team to craft a relaxed, fun atmosphere where guests unwind and enjoy themselves. Here’s what you’ll do:

  • Lead by example, inspiring top-notch service standards, fostering team growth and development, and championing The Hox way
  • Develop and innovate—drive creative ideas for our menu, stay ahead of trends, and shape the bar’s concept
  • Master the product and systems—deep knowledge of drinks, ingredients, and operational workflows
  • Encourage a can-do, team-first culture—helping to get things done with energy and enthusiasm

Requirements

  • Significant experience as a bartender with a readiness to take the next step, including expertise in great wine and cocktail craft
  • A natural people person—charming, confident behind the bar, and fantastic at guest interactions
  • Approachable, no-nonsense energy—think "you’re part of a team, not an ego"
  • Passion for hospitality and a drive to create unforgettable experiences for both guests and colleagues
  • Hands-on, practical mindset—zona’d out for perfection, prepared to call in anyone and roll up your sleeves
