Head Chef

Head Chef – Up to £60,000 per annum

Sanremo Italian Restaurant is seeking a passionate, creative, and experienced Head Chef to lead our kitchen team and drive culinary excellence. This is an exciting opportunity for a talented chef with strong leadership skills, a passion for authentic Italian cuisine, and a proven ability to manage a busy, high-quality kitchen operation.

Requirements

  • Previous experience as a Head Chef or Senior Sous Chef in a high-volume restaurant environment.
  • Strong knowledge of Italian cuisine and modern culinary trends.
  • Proven experience in menu development and kitchen management.
  • Excellent leadership, organisational, and communication skills.
  • Strong understanding of food costing, stock management, and labour control.
  • Food Safety Level 3 certification (or willingness to obtain).
  • Passion for delivering exceptional food and memorable guest experiences.

Responsibilities

  • Lead, inspire, and develop the kitchen team, creating a positive and high-performing working environment.
  • Design, develop, and cost innovative seasonal menus that reflect the Sanremo brand and delight our guests.
  • Oversee all aspects of kitchen operations, including food preparation, service, stock control, and ordering.
  • Ensure the highest standards of food quality, presentation, consistency, and hygiene are maintained at all times.
  • Manage kitchen budgets, GP targets, stock rotation, and wastage control to maximise profitability.
  • Conduct regular stock takes and maintain accurate inventory records.
  • Train, mentor, and support junior chefs and kitchen staff to encourage professional development.
  • Ensure compliance with all food safety, HACCP, health & safety, and allergen regulations.
  • Work closely with the General Manager to drive business performance and enhance the guest experience.
  • Lead by example during service, maintaining composure and efficiency in a fast-paced environment.
  • Coordinate special events, private dining experiences, and seasonal menu launches.
  • Maintain excellent communication between kitchen and front-of-house teams.
  • Ensure all kitchen equipment is properly maintained and any issues are reported promptly.
