About the Role

Head Chef at South Coast Nursing Homes, based at Abundant Grace. Leading a team to deliver inspirational, fresh-from-scratch meals, ensuring the highest standards of food quality, hygiene, and resident comfort—24/7.

Follows Company Chef standards and elevates meal experiences beyond a "wow factor" to include:

  • Beautiful table settings
  • Spotless kitchens & dining areas
  • Exceptional service and staff conduct

Set in a family-owned organisation growing in East and West Sussex, this role is ideal for someone passionate about care and culinary excellence.


Key Responsibilities

Meals & Vision

  • Direct Chef & Kitchen Assistants to deliver hyper-personalised, innovative menus with a focus on nutritional excellence.
  • Ensure seasonal choices, adequate portion sizes, and consistency aligned with resident preferences and dietary needs.
  • Explore IDDSI (International Dysphagia Diet Standardisation Initiative)—practical knowledge required.

Standards & Training

  • Apply and refine Company Chef’s protocols for:
    • Food quality & safety
    • Kitchen hygiene (including HACCP compliance)
    • Staff appearance and behaviour
    • Safe equipment use and daily upkeep
  • Conduct monthly kitchen audits, regularly reviewing audit findings with Head of Catering.
  • Train, mentor, and develop Kitchen Assistants (includes regular standards check-ins).

Operations & Compliance

  • Purchase sensible ingredients using cost-effective practices.
  • Oversee budgeting to sustain quality without waste.
  • Manage catering facilities:
    • Daily maintenance (descaling, degreasing)
    • Technology monitoring (kitchen equipment)
    • Channel discrepancies to Company Chef promptly when necessary.
  • Maintain all administrative records (e.g. HACCP logs, temperature checks, audits).

Performance & Leadership

  • Collaborate with Home Manager and Company Chef to conduct annual performance reviews for kitchen team.

Hours

  • Full-time (40 hours/week) with alternate weekends working.

Essential Requirements

  • Minimum a City & Guilds Level 2 Chef qualification (or equivalent).
  • Proven experience in a busy catering environment (nursing homes or high-volume guidance preferred).
  • Practical knowledge of IDDSI (thershold).
  • Level 2 Food Hygiene Certificate, along with/HACCP Level 3 documented hygiene training.
  • Portfolio of mealtime photography (highly desirable).
