Head Chef (Pan Asian Restaurant) – Premium Restaurant Group, East London
About the Role
An exciting opportunity to join our prestigious Pan Asian restaurant in Central London with a focus on diverse Asian culinary traditions.
We are seeking a dynamic Head Chef for a high-end Pan Asian restaurant in a premium restaurant group, specialising in:
- Developing and executing Pan Asian menus (collaborating with consultant chefs and the Group Head of Food)
- Managing a high-volume kitchen (entertaining up to 600 covers daily)
- Leading kitchen operations for à la carte and private dining events
- Ensuring kitchen profitability and meeting monthly P&L targets
Key Responsibilities
- Design and execute Pan Asian menus across multiple regional styles
- Oversee daily operations, ensuring seamless service and food delivery
- Recruit, train, and mentor a new model kitchen team
- Maintain pristine culinary standards in all aspects of the restaurant
- Monitor kitchen costs, meet financial targets, and optimise food wastage
- Collaborate with the Head of Food and executive chefs on creative and operational decisions
- Work in a fast-paced, high-pressure launch environment

Ideal Candidate Profile
- 5+ years as Head Chef in a premium, high-volume fine dining restaurant
- Extensive knowledge of Pan Asian, Japanese, or Southeast Asian cuisine – essential
- Experience with:
- Robata grill, live-fire cooking, or wok-based dishes
- Small-plate and fine-dining techniques
- A passionate leader skilled in:
- Recruitment, onboarding, and trainer team morale
- Performance tracking and corrective coaching
- Commercial acumen:
- Proficiency in kitchen budgeting, cost analysis, and KPI reporting
- Ability to drive profitability in a high-turnover setting
- Personality and adaptability:
- Hands-on, detail-oriented, and hands:on in the early phases
- Thrives under pressure with a collaborative yet decisive approach
