About The Role
The Head Chef at The Courtyard by Marriott Hotel, Exeter will play a pivotal role in delivering an unparalleled dining experience. Tucked beside the Exeter Chiefs Rugby Stadium, this 250-bedroom hotel opened in 2022 and embodies a unique, vibrant outlook—blending sports culture, premium hospitality, and culinary innovation.
Our venue comprises two distinct yet complementary offerings:

The View A rooftop restaurant & bar serving locally sourced fresh produce in a contemporary, elegant setting. Visible from miles away, it’s synonymous with exceptional service.

Kitchen & Bistro A 3rd-floor, relaxed dining area catering to business guests with simple,high-quality dishes featuring Devon’s finest local ingredients.
Additionally, the hotel hosts events in collaboration with elite sports teams, bespoke celebrations, and business meetings, all of which require your culinary leadership.
A critical role for those who thrive in fast-paced hospitality, this position expects you to lead by example, fostering a team culture where skill, sustainability, and passion drive success.
Salary & Benefits
£40,000 – £48,000 p.a.

Responsibilities
As Head Chef, you will:

Culinary Expertise
- Be certified to a minimum of 2 Michelin stars equivalents (e.g., AA Rosette Level)
- Demonstrate a deep passion for locally sourced, fresh ingredients
- Drive sustainability in food waste reduction – zéro gaspillage approach
- Possess "hands-on operational leadership" by personally running service passes and refining menu execution

Team Leadership & Guest Experience
- Lead and manage kitchen and food service staff while infusing team members with growth opportunities
- Ensure exceptional guest and employee satisfaction through consistency and innovation
- Manage and improve food cost and margins with precision
- Adapt to employee needs, workload shifts, and high-pressure scenarios

Event & Flexible Operations
- Knowledgeable in pasteurplanting (e.g., banquets, private events, individual stylings)
- Willing to work across all hotel F&B sectors, from Kitchen & Bistro to event execution
- Maintain all kitchen and food prep standards, from sanitation to guest delivery

Strategic Oversight
- staffing levels (balancing service, operational needs, and cost efficiency)
- Audit food production and support areas for compliance and creativity
- Foster culinary vision for additional events and agile cooking methods

- Minimum 2 AA Rosette or recognised equivalent chef certifications required
- Proven leadership in fast-paced, guest-facing kitchens
- Flush with local ingredients—seasonal, regional procurement knowledge strongly preferred
- Michífica pragmatism in efficiency costing and delivering hospitality-style service excellence
- Flexible work ethic, adaptable to shift schedules and diverse culinary standards
- Past experience with events catering (corporate, exclusive evening menus, micro-event creations)
- Commitment to high standards: instinct for adherence to food safety, presentation, pricing organisation and efficiency
