Head Chef / Kitchen Manager

The Role Outline: Your Shift at a Glance

Let's be completely honest. Running a commercial kitchen is not for the faint of heart. Your focus is to take total ownership of our food operation, delivering our food and beverage strategy and driving serious commercial returns. You are the absolute leader of the brigade, driving consistent standards, protecting our profit performance, and obsessing over food quality. You will build a bulletproof culture of cleanliness and food safety while creating an environment where your chefs actually look forward to coming to work.

Your Shift: What You’ll Actually Be Doing

As our Head Chef, you are the engine of the back of house. We trust you to handle:

  • The Pass: Delivering a smooth flow of work, rigidly controlling portion sizes, and examining the temperature, quality, and appearance of every single plate.
  • Immaculate Standards: Adhering strictly to food hygiene regulations and EHO directives, ensuring every delivery is checked, and smashing our internal and external audit targets consistently.
  • Commercial Hustle: Reviewing wage costs to ensure staffing levels are spot on, maintaining accurate stock par levels, and preparing business cases for any critical kitchen investments.
  • Product Passion: Conducting tastings, running daily briefings to test the team on menu knowledge, and ensuring food is cooked and served to exact company specifications.
