Le Perroquet is an all-day French brasserie led by Michelin-starred Chef Daniel Rose, delivering classic French cuisine with a focus on seasonality, technique, and elevated presentation.

As Head Expeditor, you’ll serve as the critical bridge between kitchen and restaurant, ensuring seamless service, meticulous presentation, and consistency aligned with the St. Regis brand. This role is ideal for a highly organised, detail-oriented professional who excels under pressure and is passionate about operational excellence.


Key Responsibilities

  • Bridge Role: Act as the primary liaison between Front of House (FOH) and kitchen, ensuring clear and efficient communication during peak service.
  • Flow Coordination: Manage the flow of dishes—timing, accuracy, and presentation—to align with service standards.
  • Quality Control: Monitor all food leaving the kitchen, verifying portioning, plating, garnishing, and presentation against brand specifications.
  • Kitchen-Front Coordination: Communicate effectively with chefs and service teams during busy periods to maintain operational smoothness.
  • Problem-Solving: Alert senior staff to service challenges or logistical issues promptly.
  • Setup & Maintenance: Organise the expediter’s workspace, ensuring equipment, storage areas, and serving stations are clean and operational.
  • Handling Support: Assist in food preparation and service tasks when required.
  • Hygiene & Compliance: Uphold food safety regulations and maintain hygiene standards across the expediting area.
  • Training & Development: Guide junior team members to ensure uniformity in standards and practices.
  • Policy Adherence: Follow all health, safety, and company procedures meticulously.
