The Chancery Rosewood is redefining luxury in Mayfair, housed in the former U.S. Embassy and reimagined by Sir David Chipperfield. With 144 suites by Joseph Dirand and a collection of dynamic dining and bar spaces, it’s a place where experiences are curated, conversations flow, and every detail matters.

As Head of Wine

You will lead the strategic and commercial development of The Chancery Rosewood’s wine programme — a rare opportunity to build one of London’s leading hotel wine destinations, combining deep wine expertise with direct ownership of buying, pricing, and cellar strategy.

Key Responsibilities

  • Lead the wine programme end-to-end — from buying strategy and cellar management to pricing, guest experience, and long-term commercial performance.
  • Build direct relationships with growers, producers, and importers, using the hotel’s EORI number to secure exclusive allocations and favourable terms.
  • Develop and curate the wine list, ensuring depth, breadth, and long-term value that reflect The Chancery Rosewood’s ambition and guest profile.
  • Train and inspire the wider F&B team, building wine knowledge, confidence, and guest engagement across every outlet.
  • Represent The Chancery Rosewood within London’s wine community, building the property’s profile, network, and industry recognition.
