Role Overview
The Indian Specialist Cuisine Chef will join our Executive Chef Team, overseeing the preparation and production of authentic Indian cuisine for DO & CO, one of the world’s leading luxury airline catering and gourmet fulfilment companies.
Key responsibilities include:
- Leading and training kitchen teams to maintain highest standards in quality, presentation, and consistency.
- Collaborating with the Executive Chef Team to develop and refine menus, ensuring compliance with company standards, food safety regulations, and operational procedures.
- Driving a positive team culture while fostering continuous improvement.
- Ensuring cost efficiency, waste minimisation, and regulatory adherence (HACCP, Health & Safety, SOPs).
Key Responsibilities
Production & Compliance
- Prepare and supervise authentic Indian dishes, including:
- Curries
- Tandoori items
- Rice dishes
- Breads & regional specialties
- Maintain flavour consistency, portioning, and presentation standards while controlling food costs.
- Monitor spices, marinades, sauces, and specialty ingredients for freshness and authenticity.
- Conduct quality control checks on raw materials and finished products to ensure dietary and safety specifications.

Team Leadership & Operations
- Lead the kitchen team in the absence of the Head Chef, motivating staff in a fast-paced environment.
- Plan production schedules while balancing efficiency, quality, and compliance.
- Train, coach, and mentor junior chefs through structured in-house programmes.
- Foster collaboration across departments and foster a supportive team environment.
Administrative & Reporting
- Assist with stock control, cost reporting, and kitchen cost management.
- Ensure compliance with all HACCP, Food Safety, and regulatory requirements.
- Support menu innovation and customer feedback integration.
Requirements & Qualifications
Experience & Skills
- Proven experience in a similar role or within:
- Indian cuisine
- Fine dining / luxury hospitality / catering
- Extensive knowledge of:
- Authentic Indian cooking techniques, regional cuisines, and spice profiles
- Tandoori cooking, traditional bread-making (e.g., naan, roti)
- Food safety, HACCP, kitchen hygiene, and allergen management
- Exceptional leadership and team management skills:
- Ability to train, motivate, and empower kitchen staff
- Strong organisational and problem-solving abilities for a fast-paced environment.
- Hands-on culinary expertise in recipe development, scaling, and budgeting.
- Fluent communication skills with a professional approach.
