Senior Property Project Manager – Interim Role

About The Brand: Tortilla

Founded in 2007, Tortilla is Europe’s leading fast-casual Mexican restaurant brand, specialising in authentic California-style burritos, tacos, and salads.

Inspired by their hometown San Francisco, Brandon & Jen were motivated to bring burrito capital of the world street food magic to the UK. About The Team

This role sits within the Property function, reporting to the Property Director and collaborating with contractors, suppliers, and stakeholders.

The team’s mission is to leverage multiple sites for new store openings, refurbishments, and estate projects—all while thriving in a fast, ever-evolving industry.

The Role: Interim Senior Property Project Manager

A 3-month contract seeking a hands-on environmental professional to deliver a defined portfolio of CapEx (Capital Expenditure) and property projects.

Responsibilities require:

  • End-to-end project management, from mobilisation to successful completion
  • Operate in a fast-paced multi-site business, balancing tight deadlines, coordinated workstreams, and external partners.

Key Responsibilities

  • Oversee a defined CapEx and property project portfolio
  • Fulfil fixed timelines across multiple projects
  • Coordinate contractors, suppliers, and advisors efficiently
  • Lead end-to-end rollouts, such as new kiosk setups
  • Orchestrate large-scale CapEx works across the entire estate
  • Develop and standardise project documentation and templates to improve efficiency

Requirements

  • Proven Senior Project Manager experience in hospitality, retail, or food service
  • Strong commercial acumen with contract management knowledge (preferably JCT contracts)
  • Proven track record in managing contractors and suppliers
  • Ability to hit the ground running, proactively solve challenges
  • Exceptional organisational skills, capable of managing concurrent projects
  • Must be available to start immediately on this short-term opportunity
