About the Role

At The Caledonian Edinburgh, our culinary team is integral to delivering a refined and vibrant guest dining experience, from all-day service to our lively venue The Court. We are seeking a Junior Sous Chef to contribute to our kitchen brigade with skill, creativity, and a passion for exceptional dishes crafted using Scottish produce.


The Person

We are looking for an experienced chef with strong leadership qualities, capable of:

  • Leading a calm, organised kitchen section or a full service
  • Showcasing excellent communication and team collaboration
  • Demonstrating a passion for training and developing junior chefs
  • Demonstrating a robust understanding of food safety, HACCP, and kitchen operations

Under the guidance of the Head Chef, you’ll:

  • Support leadership in managing and motivating the kitchen team
  • Oversee daily food preparation, cooking, and presentation to brand standards
  • Maintain smooth operations in the kitchen, including covering the Head Chef when needed
  • Supervise food quality, consistency, cost control, and waste minimisation
  • Champion health & safety, hygiene, and compliance across the kitchen

Specific Duties

  • Lead team during service to ensure quality and standards are met
  • Maintain kitchen organisation levels and stock control, ensuring hygiene and neatness
  • Assist in staff scheduling processes (calendar, performance reviews)
  • Collaborate with front-of-house for seamless guest experiences
  • Provide hands-on coaching and design training programmes for junior chefs
