Junior Sous Chef
Restaurant Junior Sous Chef – Sheraton Grand Hotel & Spa, Edinburgh
We are currently recruiting for an experienced Restaurant Junior Sous Chef to join our award-winning kitchen brigade at the Sheraton Grand Hotel & Spa.
About Sheraton Grand Hotel & Spa Sheraton Grand Hotel & Spa is one of Scotland’s leading 5-star hotels, offering the largest banqueting and meeting facilities in Edinburgh (capacity: up to 500 guests) with its award-winning One Square Restaurant and bar.
Role
As a Junior Sous Chef, you will:
- Lead our fine dining team at One Square.
- Oversee operations for afternoon teas, Saturday brunch, lunch, dinner, Sunday lunch, and private function events in the restaurant.
- Deliver brasserie-style cuisine, blending contemporary flavors with traditional techniques using only the finest ingredients.
- Ensure the main kitchen team is fully prepared for service, managing workflow and supporting junior chefs.
- Maintain food quality, presentation, and cost control standards.
Requirements
We seek an ambitious candidate with:
- 2–3 years’ experience in 1–2 rosette dining environments.
- Proven ability to work independently and collaboratively while improving skills.
- Experience in multi-outlet kitchen operations.
- Strong quality control and service excellence.
- Leadership in training and assisting junior team members.
- Full awareness of food prep, receiving, storage, and sanitation protocols.
- Comprehensive knowledge of the entire menu, recipes, production methods, and presentation standards.
- Proficiency in alcohol service (if applicable) and food cost management.
- Effective time management, ensuring deadlines are met by the whole team.
- Ability to plan menus and coordinate kitchen sections seamlessly.
- Experience managing staff rotations, training, and departmental communication.
- Basic computational skills (e.g., spreadsheets, inventory management).
