ABOUT THE ROLE
You will support the Junior Sous Chef in the smooth and efficient running of the Gordon Ramsay at The Mere kitchen, ensuring every area meets the highest possible standards.
This role involves:
- Daily service coordination — ensuring operations run seamlessly
- Culinary leadership partnership — working closely with executive and head chefs to address operational and staff queries
- Team performance enhancement — providing ongoing training to maintain excellence
- Supportive cooking & food preparation — meeting business and guest expectations
Key Responsibilities
Production & Service Quality
- Collaborate with the Executive Sous Chef and Head Chef to maintain high levels of production quality and food presentation
- Play an active role in cost control, enforcing food waste policies and adherence to cost standards
- Assist in departmental training, ensuring consistency and excellence
- Deputise the Executive Sous Chef and Head Chef in their absence

Operational & Safety Leadership
- Manage food outlets remotely during Executive Sous and Head Chef’s unavailability
- Monitor health & hygiene, ensuring compliance with all regulations
- Champion and enforce quality standards across all kitchen operations
Guest Experience
- Deliver 5-star quality in room service — ensuring correct temperature, presentation, and timeliness
- Daily strive to exceed guest expectations through meticulous attention to detail
- Smooth operational workflows to support germane food and service quality
Legal & Organizational Compliance
- Adhere to all legal requirements, regulations, and safety guidelines
- Conduct orientation and onboarding for new team members
Flexibility & Growth opportunities
Fairmont believes in the power of multi-skilling to meet guest and colleague needs. This role may require occasional flexibility across other operational tasks to ensure seamless service delivery.
Requirements
- Proven experience in a similar role, ideally within a luxury or high-volume culinary environment
- Training or qualification in Hospitality Management/Food & Beverage is preferred
- Expertise across all aspects of restaurant and events service
- Minimum 1-year relevant experience in a similar role with verifiable track records of results demonstrated
