About the Role
We are seeking an experienced Restaurant Junior Sous Chef to join the award-winning kitchen brigade at the Sheraton Grand Hotel & Spa.
The Sheraton Grand Hotel & Spa is one of Scotland’s leading 5-star hotels. As the largest 5-star property in Edinburgh, it offers:
- The biggest banqueting and meeting facilities in the city (capacity up to 500 guests)
- An award-winning One Square Restaurant and bar
Key Responsibilities
The Junior Sous Chef role involves leading the fine dining team at One Square, overseeing afternoon teas, Saturday brunch, lunch, dinner, Sunday lunch, and small private function events. The restaurant serves brasserie-style food, blending contemporary flavours with traditional and modern techniques, using only the finest ingredients.
- Lead the main kitchen team during service, ensuring the kitchen is fully prepared and runs efficiently
- Oversee standards and control kitchen operations during peak hours
- Liaise across all kitchen sections for smooth service coordination
- Deputise for senior chefs as needed
- Manage inventory, food quality, and cost control
- Contribute to menu planning and execution

Requirements
We are looking for a motivated candidate ready to progress their career:
- At least 2–3 years of experience in a 1 or 2 rosette kitchen environment
- Ability to work independently and collaboratively as part of a multi-level kitchen team
- Strong understanding of food safety, quality control, and service standards
- Demonstrable leadership and mentor skills (guiding junior chefs effectively)
- Comprehensive knowledge of menu items, recipes, production methods, and presentation standards
- Proficiency in basic computational tasks (inventory tracking, cost analysis, scheduling)
- Dynamic team player with high-time-pressure adaptability
