About The Restaurant

Rondo, a relaxed seasonal modern bistro at The Hoxton, Holborn, serves up great wines and imaginative dishes from breakfast to dinner.

Led by Head Chef Chris Gillard (formerly of St John’s) and featuring Will Lander’s standout wine programme (including his impressive wine wall from Quality Chop House), Rondo is the kind of restaurant you’ll love stumbling upon after a long day—serious about food and drink, with a welcoming, vibrant vibe.

About the Role

What you’ll do

  • Support Head Chef and Sous Chef in leading a dynamic kitchen team of up to 20+ members
  • Drive menu innovation while upholding our signature Hoxton restaurant framework—letting fresh, provenance-focused ingredients shine
  • Maintain kitchen standards with efficiency without compromising quality or menu integrity
  • Step in to oversee the kitchen team during Head Chef and Sous Chef absences
  • Lead by example—guest experience and team motivation are at the heart of everything. Empower your colleagues to feel confident, supported, and capable of delivering top-tier Hoxton experiences.

Requirements

Qualifications & Experience

We’re looking for:

  • 2+ years’ experience as a Junior Sous Chef in a fast-paced, ingredient-driven kitchen environment
  • A track record of managing large kitchen teams—try disagreements and tension in a high-pressure environment like breathing
  • Drive for creativity while staying committed to brand standards and our ‘Hoxton’ identity
  • A down-to-earth personality—we like mates, not clones, in chef whites
  • Genuine passion for hospitality—making memorable, personal experiences for guests and the team
  • The inquiring attitude of ‘how can it be done better?’ (as opposed to saying ‘that’s how we do it here’)
  • Willingness to keep brushing up skills—no stagnation, just progression
  • Bonus points for experience in M&E (meetings and events) or banqueting
