voco Grand Central Hotel and Kimpton Blythswood Square Hotel are looking for a Cluster Kitchen Manager to support our iconic Glasgow hotels!
At voco Grand Central Glasgow and Kimpton Blythswood Square Hotel, our kitchens are at the heart of the guest experience. From busy restaurant services and five-star dining to weddings, conferences and large-scale events, our talented kitchen brigades deliver memorable experiences every day.
We are looking for an experienced, organised and proactive Cluster Kitchen Manager to join our team on a full-time, permanent basis, working 40 hours per week, five days out of seven, including weekends and bank holidays in line with the operational needs of the business.
This is a hands-on leadership role supporting kitchen operations across both hotels. Working closely with our Executive Head Chef, Senior Chefs and wider hotel leadership teams, you will take ownership of food safety, health and safety, compliance, purchasing, training and continuous improvement, ensuring our kitchens remain safe, efficient and ready to deliver exceptional experiences every day.
What You'll Be Doing
As our Cluster Kitchen Manager, you will:
- Lead food safety, HACCP and Health & Safety compliance across both hotel kitchens.
- Conduct kitchen audits and compliance checks, ensuring corrective actions are completed.
- Manage allergen compliance, COSHH, risk assessments and safe systems of work.
- Support purchasing, stock control and ordering through Procurement Wizard (PW).
- Monitor food waste, identify trends and implement improvements that reduce waste and improve profitability.
- Review business levels and operational requirements to support effective kitchen planning.
- Coordinate kitchen porter cleaning schedules and maintain exceptional cleanliness standards.
- Deliver and coordinate kitchen inductions, compliance training and colleague development.
- Review guest feedback and work with senior chefs to drive continuous improvement.
- Support menu planning, brand standards and operational projects across both hotels.

Essential
What we're looking for
- Minimum Level 3 Food Safety qualification.
- Minimum 2 years' experience in a similar Kitchen Manager or Kitchen Operations role.
- Proven experience managing Food Safety, HACCP and Health & Safety within a commercial kitchen.
- Experience using Procurement Wizard (PW).
- Experience working within a broad, fast-paced kitchen brigade.
- Strong knowledge of allergen management, COSHH and kitchen compliance.
- Excellent organisational, communication and problem-solving skills.
- A proactive approach with a passion for Continuous Improvement and developing others.
Desirable
- Previous experience within a hotel or hospitality environment.
- Experience using ALERT65 or a similar food safety management system.
- Level 3 Health & Safety qualification.
- Experience supporting multi-site or cluster kitchen operations.
