Level 3 Restaurant and Bar Manager Apprenticeship at Donnington Manor Hotel
At the heart of the hotel's food and beverage offering are two distinct venues: the Chartwell Restaurant, housed beneath the medieval wooden beams of the original manor house, serving bistro-style, Mediterranean-influenced dishes and classic British favourites made with seasonal, locally sourced ingredients; and the Spectrum Bar & Lounge, a contemporary space offering an extensive drinks menu, signature cocktails, and a varied food selection including sharing platters, pizzas, pasta, grills, sandwiches, and traditional afternoon tea. Together, these venues cater to both hotel guests and local visitors, providing relaxed yet high-quality dining experiences throughout the day. The hotel's food and beverage offering reflects its commitment to warm, attentive hospitality, combining the character and charm of its historic surroundings with modern service and a focus on fresh, locally inspired cuisine.

Apprenticeship Overview:
- Salary: £8.00 an hour, Automatic pay increase after one year on programme for 19+ year olds
- Working Week: Monday, Tuesday, Friday, Saturday and Sunday – shift to be confirmed hours are between 12pm and 11pm (30 minutes lunch break)
- Hours: 40 hours per week
- Duration: 18 months

What you’ll do at work
As Food and Beverage Manager, you will oversee the day-to-day operation of the hotel's food and beverage outlets, ensuring guests receive a warm, professional, and memorable dining experience that reflects the hotel's high standards. You will lead, motivate, and develop the front-of-house team, manage staff rotas and training, oversee stock control and supplier relationships, and work closely with the kitchen team to ensure efficient and seamless service delivery. Key responsibilities include maintaining exceptional customer service standards, managing budgets and controlling costs, responding to guest feedback and resolving complaints, ensuring compliance with health and safety and licensing regulations, and supporting the wider hotel management team in achieving the hotel's operational and commercial objectives.

- Oversee the day-to-day operation of the restaurant and bar
- Manage budgets, stock control, and supplier relationships
- Ensure compliance with licensing, food safety, health and safety, and hygiene regulations
- Maintain high standards of customer service and promptly resolve guest queries or complaints
- Work closely with the kitchen team to ensure efficient and seamless service delivery
Person Specification
Essential:
- Well-presented with a professional manner suited to a country house/manor hotel environment
- Passion for food, drink, and delivering exceptional hospitality
- Strong leadership, communication, and organisational skills
- Ability to remain calm and efficient in a fast-paced environment
- GCSE English (Grade A*-C/9-4 or Level 2 equivalent) Essential
- GCSE Maths (Grade A*-C/9-4 or Level 2 equivalent) Essential

Desired qualifications
- Proven experience working in a Restaurant/Bar ideally in a hotel
- Personal Licence Holder
- Level 3 Food Hygiene Certificate
- Wine or beverage service qualification (e.g. WSET)
- Experience using EPOS and restaurant reservation systems
- Demonstrated experience managing food and beverage operations, including restaurant, bar, and event service
- Relevant qualification in Hospitality Management, Business Management
- Strong knowledge of food and beverage service standards
- Excellent customer service skills
Training and Qualification
The successful candidate will achieve the Level 3 Hospitality Supervisor Apprenticeship Standard.
Expected Career Progression
Successful completion of the apprenticeship could lead to permanent opportunities within the business.
