Operations Chef / Executive Chef

London Pub Group

A GBP 65,000 + Bonus

We are working with a fantastic pub group in London that is looking for an Operations Chef / Executive Chef to support a portfolio of around 10 sites across the capital.

This is a hands-on operational role, working as part of a wider group chef team.

The sites range from well-run branded pubs through to more food-led neighbourhood destinations, so the right person will need to be adaptable, organised, and comfortable working across different styles of operation.

This role is not purely about menu creation.

The key focus is on standards, systems, consistency, and performance.

You Will Support Sites With

  • Kitchen systems and operational structure
  • Speed of service and service flow
  • Food quality and consistency
  • Labour, GP and kitchen cost controls
  • Team training and chef development
  • Kitchen audits and compliance
  • Improving underperforming sites
  • Supporting openings, changes, and relaunches
  • Helping kitchens hit targets without losing quality

The ideal candidate will come from a quality branded restaurant group, premium pub group, gastro pub business, or a similar multi-site fresh food background.

You will need to understand how to implement systems that chefs actually follow.

You will also need to be confident walking into a kitchen, identifying what needs fixing, and helping the team move forward.

A fresh food background is essential.

You must be based in London, as this role requires regular travel across your area and the ability to mobilise quickly when sites need support.

This role would suit someone who enjoys being out in the business, working with chefs, improving standards, and making a visible impact across multiple sites.

What We Are Looking For

  • Multi-site chef experience, ideally across pubs, restaurants, or fresh food brands
  • Strong understanding of kitchen systems and controls
  • Experience improving speed of service and kitchen performance
  • A calm, credible, and hands-on leadership style
  • Good commercial understanding around GP, labour, and stock
  • Strong training and coaching ability
  • Fresh food experience
  • London based and you MUST have multi-site experience

Salary: A GBP 65,000 + bonus
