Pastry Chef - Locke Canary Wharf
A brand new opening. A blank page. We are looking for a Pastry Chef to write the first chapter.
We are opening Locke Canary Wharf, and we want a founding Pastry Chef to help shape the sweet side of our story. The last thing a guest tastes is often the thing they remember most, and from our very first service, that moment is yours to own. This is a fantastic opportunity to join a brand new venue in the heart of London and help build a dessert offering from scratch, with a group that truly values its chefs.
This isn't a role where you follow an existing spec. As a new opening, you get to develop the desserts, set the standards, and bring your own creativity to a section that is yours to define. If pastry is your passion and you have always wanted a blank canvas, this is the kitchen to make it happen.

What Will You Be Doing?
- Helping to launch a brand new pastry section and set it up from day one
- Preparing, baking, and finishing a range of desserts, pastries, and baked goods
- Developing our opening dessert menu and shaping seasonal changes
- Maintaining consistency, quality, and presentation across all pastry items
- Managing the pastry section, including mise en place and stock rotation
- Upholding strict food safety, allergen, and hygiene standards
- Controlling waste and supporting ordering for the pastry section
- Working closely with a new kitchen team to deliver a seamless launch
What Do You Need?
- Proven experience as a Pastry Chef in a quality kitchen or bakery
- Strong technical pastry skills across a range of styles and techniques
- A creative eye for presentation and a passion for dessert
- The ability to work accurately and calmly under pressure
- A thorough understanding of allergens, food safety, and hygiene standards
- Reliability, attention to detail, and the drive for a new opening
- The Right to Work in the UK
