As a Pastry Commis Chef
You will ensure that the preparation and cooking of all food cooked on their section in accordance with agreed recipes and processes. The Pastry Commis Chef will be supporting the kitchen team for the planning, cooking, and presentation of all required food items from the pastry kitchen.
What will you be doing?
- Have basic knowledge of all the following basic cooking techniques.
- To assist in managing the preparation and cooking of food in particularly pastries, desserts, breads and other baked goods within the Pastry Kitchen for consumption throughout the hotel.
- To be familiar with all recipes that need to be prepared in your section.
- Follow instructions from senior chefs.
- Ensure correct portion control and plating standards are adhered to.
- Ensure your section is always clean and tidy including fridges and work tops with all containers clean and appropriately covered.
- Ensure that all equipment / utensils in the section are correctly handled and maintained liaising with the Maintenance department where necessary.
- Report anything that is needed to the kitchen porters to clean or sort out (spillages, empty the bins, top up the blue paper and soap in the hand sinks, remove any boxes for the kitchen).
- Ensure that all labels are clearly written with a suitable date, on each prepared food item.
- Complete your basic food hygiene within one month of starting with us, we will provide the training.
- Always adhere to the Hotel’s Health and Safety and Food Hygiene policies.
