Branch: Nobu Hotel London Portman Square Location: London Portman Square, West London Salary/Benefits: £27,158 plus £3,000 service charge and bonuses Contract Type: Permanent Hours: Full-time (40 hours per week)

As a Pastry Commis Chef, you’ll join the pastry team to craft beautifully presented desserts and baked items that embody the luxury and creativity of Nobu. Working closely with the Pastry Head Chef and wider team, you’ll support preparation, production, and presentation while upholding our standards of hygiene, consistency, and attention to detail.

This is an excellent opportunity to develop your pastry skills in a luxury hotel environment.


Key Responsibilities

  • Assist in the preparation, baking, and presentation of pastry dishes
  • Maintain an organised, stocked, and service-ready pastry station
  • Strictly follow Nobu recipes and standards to ensure consistency and quality
  • Adhere to food hygiene, cleanliness, and health & safety standards at all times
  • Safeguard allergen management and prevent cross-contamination
  • Ensure pastry equipment is clean, well-maintained, and reported for repair if damaged
  • Collaborate with the wider kitchen team during service, lending support when needed
  • Foster a welcoming environment by mentoring and integrating new team members
  • Demonstrate a proactive, positive, and detail-focused approach to work
  • Embody the Nobu values: Family, Crafted, Smile, and Kokoro in every interaction
