About us

bread&truffle is a premium Italian grab-and-go concept bringing genuine Italian craft to London's best locations, from Monument and Spitalfields to Canary Wharf, St Pancras and beyond. We're growing, with new sites in the pipeline across the city, and we're looking for an operator who can take a new store from empty shell to opening day.


The role

This is a project-based engagement, one defined scope per store. You'll own the delivery of a new site opening end to end, on time and on budget, and hand over a fully operational store ready for day one of trading. As our pipeline grows, strong delivery on one opening leads directly to the next.

Each engagement has a clear start, a clear scope, and a clear finish: keys handed over, store trading.

What you'll own (per store)

  • End-to-end project plan and critical path from site handover to launch day
  • Coordinating the fit-out: main contractor, shopfitters, M&E, refrigeration and equipment installers
  • Equipment and FF&E procurement, delivery scheduling and installation sign-off
  • Licensing, permits and landlord/building management liaison
  • Budget ownership, tracking spend against the approved fit-out budget and flagging variances early
  • Snagging and quality control to bread&truffle standards
  • Coordinating with Operations for staff onboarding, stock and pre-opening readiness
  • A clean handover to the store team and Head of Operations

What we're looking for

  • Proven track record delivering retail, F&B or hospitality fit-outs / new-site openings in London
  • Strong contractor and supplier management; you know how to hold a programme together
  • Confident with budgets, timelines and reporting to founders/senior stakeholders
  • Hands-on and on-site, comfortable solving problems in real time
  • Knowledge of UK commercial fit-out, H&S and food-premises requirements is a strong plus
  • Self-directed; you run the project, we don't run you

Terms

  • Fixed project fee of £5,000–£15,000 per store opening, depending on site size, scope and complexity, agreed before mobilisation
  • Paid in stages against delivery milestones
  • Freelance / contract basis
  • London-based, on-site presence required
  • Multiple openings in the pipeline; repeat engagements available for strong delivery
