As Restaurant Manager
As Restaurant Manager, you are the director of the dining experience—commanding the floor, shaping the mood, and ensuring each guest’s journey unfolds like a scene from bygone years, where hospitality was your first thought as you walk through the doors of Dumbleton Hall. When guests arrive, the experience starts, and exceeding expectations begins.
You’ll be leading a team of like-minded characters—our exceptional service team—guiding them with flair, passion, and unrelenting attention to detail.

Responsibilities
- Direct the daily restaurant performance, ensuring smooth flow and a seamless guest journey
- Lead, train, and inspire a dynamic cast of kitchen and front-of-house stars
- Rising Stars with our teams are helped to gain confidence in their roles and we inspire our teams to achieve their very best every single day.
- Curate an atmosphere of excellence—from service precision to ambient perfection
- Conduct pre-service briefings like opening night pep talks, ensuring everyone knows their cues.
- Manage VIP reservations, private soirées, and bespoke experiences with grace and discretion.
- Working with Head Chef to ensure our guests are fully informed and communication flows seamlessly between.
- Command the stage of health, safety, and hygiene with impeccable standards
- Oversee rotas, payroll, and stock—behind-the-scenes magic that keeps the curtain rising
- Deliver performance reports and help hit KPIs like box office hits
- A life lived Grand is infused into our DNA and Hospitality is a focus throughout our guests’ interactions with all teams.
Dining at Dumbleton
Our culinary offering completes the grand house-party experience. Seasonal British cooking, Cotswold provenance, multi-course tasting menus, and the warmth of the Cedar Tree Restaurant define our approach. From high teas in the Oak Drawing Room to post-theatre nightcaps in the Library Bar, our service is formal in ritual yet unpretentious in feeling.

Being Bespoke
Bespoke Hotels was founded in 2000 and has consistently grown to the point where we now manage over 9,500 hotel rooms, 8,000 employees, and £815 million of assets.
We stand today as the UK’s Largest Independent Hotel Group, owning a number of hotels and partnering with an ever-increasing portfolio alongside this. Every agreement we have is Bespoke by name, and bespoke by nature. Our properties range from specialist golfing hotels, to award-winning spa resorts and chic city centre properties.
