Company Description

Lympstone Manor Hotel, Restaurant and Vineyard is a luxury 5-star country house hotel set in a Grade II listed Georgian manor overlooking the Exe estuary in Devon. Created by renowned chef Michael Caines MBE, it features 21 individually designed bedrooms, a fine dining restaurant recognized with a Michelin Star, and membership in the Relais & Châteaux collection. The estate includes a vineyard with 17,500 vines producing classic Champagne-method sparkling wines, and the Pool House Restaurant and Bar with a unique outdoor heated pool experience. Role Description

The Restaurant Manager is a full-time, on-site role based in Exmouth, responsible for overseeing the daily operations of the restaurant to ensure exceptional guest experiences. This includes:

The role involves:

  • Leading, training, and scheduling team members
  • Supporting hiring and onboarding
  • Maintaining high levels of customer satisfaction in line with the Lympstone Manor brand values

The Restaurant Manager will also:

  • Monitor food and beverage quality
  • Manage health and safety and compliance
  • Contribute to continuous improvement of service, revenue, and operational efficiency

Qualifications

  • Strong customer-focused mindset with skills in Customer Service and Customer Satisfaction.
  • Effective Communication skills for leading teams, engaging guests, and collaborating with kitchen and hotel departments.
  • Experience in Hiring, training, and developing team members in a hospitality or restaurant environment.
  • Solid Food & Beverage knowledge, ideally in fine dining, wine service, and premium hospitality standards.
  • Proven experience in restaurant or hospitality management within a high-end or luxury setting.
  • Ability to work on-site full time, including evenings, weekends, and holidays as required.
  • Excellent organizational and problem-solving skills, with attention to detail and a calm, professional approach under pressure.
  • Knowledge of health, safety, and food hygiene regulations; relevant certifications are an advantage.
  • Formal hospitality or management training, or equivalent experience, is preferred.
