Job Description: Restaurant Manager – Norfolk Food Hall
Reports to: General Manager
Job Purpose
Responsible for the food and beverage operation within the Norfolk Food Hall including financial performance, customer service delivery, stock and margin control, team development, and business development by delivering a high quality, locally sourced food and drink experience.
Responsibilities
Operational Management
- Responsible for all front and back of house standards with regards to Health and Safety, hygiene, food preparation etc
- Ensures correct stock processes are followed and stock management issues are resolved within acceptable timescales
- Ensures stock accuracy is maintained within the accepted Company tolerance
- Controls and maintains correct stock levels to reflect daily/weekly sales
- Ensures risk assessments are completed and records are kept up-to-date
Financial Management
- Drives sales to exceed all KPI targets
- Takes ownership and responsibility for managing areas of profit, loss and controllable costs within the food & beverage operation
- Manages payroll costs effectively by monitoring wage costs to sales ratio on a weekly basis
- Controls stock levels effectively to maximise sales whilst managing wastage and slippage costs in line with targets
- Ensures that correct margins are implemented and maintained by producing Food and Beverage to company specification for all menu items including consistent portion control

Team Management
- Inspires, motivates, and develops the team to optimise individual performance and provide succession planning for the business
- Communicates with the team through daily briefs and individual performance reviews
- Demonstrates the ability to recognise good performance and celebrate success with the team
- Recruits for own team as required and completes effective induction programmes
- Ensures performance and attendance issues are managed consistently and in line with company policy
- Ensures all colleagues complete the full formal induction programme
- Ensures all colleagues are trained on all processes and procedures relevant to their job role
Customer Service
- Acts as a role model to the team to ensure a high standard of customer experience is consistently delivered
- Monitors customer experience delivered by the team and provides ongoing coaching for continuous improvements and to drive new opportunities
- Resolves customer service issues effectively and in a timely manner
- Provides relevant training and support to colleagues to inspire them to achieve targets and deliver an excellent customer service experience
- Monitors customer feedback and works with the General Manager to achieve expected performance results
- Ensures colleague rotas match sales trends to achieve targets and maintain an excellent customer experience

Business Development
- Works in conjunction with the General Manager to establish relationships with local suppliers
- Plays an active role in menu development and works with the General Manager to ensure that the hospitality offer reflects the broader ambitions and Mission Statement of the Norfolk Food Hall
- Liaises with the wider RNAA and marketing team with regards to seasonal promotions, affiliate events and pop-up opportunities
