We are seeking a passionate and driven Restaurant Manager to lead the operations of Hugo’s Restaurant, The Atrium, and Poolside Drinks Service. This is an opportunity for an experienced hospitality professional to take ownership of multiple service areas and deliver outstanding guest experiences.
About The Role
As Restaurant Manager, you will oversee daily operations of Hugo’s and associated outlets, ensuring high standards of service, financial success, and team engagement. You’ll play a key role in shaping guest experiences and driving the performance of our Food & Beverage offering.
Key Responsibilities
Operations
- Lead daily operations of Hugo’s Restaurant, Atrium Lounge, and Poolside service
- Deliver exceptional guest experiences through superior service, quality, and presentation
- Collaborate closely with kitchen and bar teams to ensure seamless service delivery
- Address guest feedback proactively and continuously improve service standards
- Support the development and execution of events, promotions, and new initiatives

Leadership & Team Management
- Inspire, lead, and develop a high-performing F&B team
- Manage recruitment, onboarding, training, and performance
- Create and manage effective rotas and staffing schedules
- Conduct regular team meetings and performance reviews
Financial Performance
- Manage budgets, costs, and stock control to maximise profitability
- Support the delivery of revenue and profit targets
- Monitor sales performance and implement strategies to drive growth
- Ensure compliance with purchasing and financial procedures
Training & Development
- Identify training needs and implement development plans
- Ensure all team members are fully trained and supported
- Maintain accurate training records and compliance standards
Health & Safety
- Ensure compliance with food safety, licensing, and health & safety legislation
- Maintain high standards of hygiene, cleanliness, and safety across all outlets
- Complete risk assessments and ensure team awareness of safety procedures
- Promote a safe and positive working environment

About You
- Proven experience in a restaurant or F&B management role
- Excellent leadership and people management skills
- Commercially aware with experience in budget and cost management
- Passionate about delivering exceptional guest experiences
- Strong communication and organisational abilities
- Knowledge of health & safety and food hygiene regulations
Additional Information
- Hours: 45 per week
- Working Pattern: 5 out of 7 days (including evenings, weekends, and bank holidays)
- Salary: £37,000 per annum
- Note: Visa sponsorship unavailable. Candidates must have legal right to work in the UK
