Company Description

Mitsu London is a new restaurant opened in early 2026, bringing together the vibrance and creativity of East London with the casual neighbourhood izakaya culture of East Tokyo. The concept centers on Japanese robata grilling and kamameshi rice dishes designed for sharing, complemented by cocktails, sake, and iced mizuwari tankards. Located in Shoreditch, Mitsu aims to be a destination for relaxed lunches, lively dinners, and late-night celebrations. Guests can also enjoy a private karaoke room and DJ sets by local talent, creating an atmosphere focused on memorable experiences and high-energy hospitality.

Role Description

The Restaurant Manager is a full-time, on-site role based in Shoreditch, responsible for the day-to-day operations of Mitsu London. This role oversees floor management during service, ensures consistent delivery of high-quality food and beverages, and maintains an engaging, welcoming atmosphere for guests.

  • Leading and supporting front-of-house teams
  • Managing reservations and table turns
  • Handling guest feedback
  • Driving customer satisfaction

The Restaurant Manager will coordinate with the kitchen and bar teams, monitor stock levels, uphold health and safety standards, and support scheduling, training, and performance management. This position also contributes to implementing promotional activities and special events to reflect Mitsu’s energetic and creative brand.

Qualifications

  • Strong focus on Customer Service and Customer Satisfaction, with a track record of delivering memorable guest experiences in a restaurant or hospitality setting.
  • Experience in Hiring and people management, including recruitment, onboarding, training, and developing diverse front-of-house teams.
  • Excellent Communication skills, with the ability to collaborate effectively across kitchen, bar, and service teams and to address guest needs confidently and professionally.
  • Solid Food & Beverage knowledge, ideally including Japanese cuisine, cocktails, and sake, and the ability to guide guests through menus and pairings.
  • Previous experience as a Restaurant Manager, Assistant Manager, or similar leadership role in a high-volume or premium casual restaurant.
  • Strong organizational and problem-solving abilities, with attention to detail in scheduling, stock control, and compliance with health and safety regulations.
  • Comfort working evenings and weekends as required by the operation, and the ability to thrive in a fast-paced, high-energy environment.
  • Relevant hospitality or management qualifications are advantageous but not essential; commitment to ongoing professional development is valued.
