The Montagu Kitchen at Hyatt Regency London – The Churchill is London's only Mediterranean hotel grill house, celebrating the craft of open fire cooking. Located in the heart of Marylebone, the restaurant showcases bold yet simple Mediterranean inspired dishes prepared over the Josper Grill, complemented by a carefully curated wine list and warm, intuitive service. Combining relaxed elegance with contemporary design, The Montagu Kitchen welcomes hotel guests and local diners alike for breakfast, all day dining, afternoon tea, private dining, and memorable occasions throughout the year.
The Role
Reporting to the Director of Food & Beverage, you will lead the daily operations of The Montagu Kitchen, ensuring every guest enjoys a seamless and memorable dining experience while continuing to strengthen the restaurant's reputation as one of Marylebone's leading dining destinations. This is a hands on management role with genuine operational and commercial responsibility, where you will play a key part in shaping the restaurant's continued success.
- You will lead from the floor with confidence and presence, creating an environment where exceptional service, attention to detail, and genuine hospitality come naturally.
- From overseeing breakfast, all day dining, afternoon tea, private dining, and special events, to ensuring every guest interaction reflects Hyatt's luxury standards, you will set the tone for every service.
- You will inspire, coach, and develop a high performing team, creating a culture built on collaboration, accountability, and continuous improvement.
- Through effective training, mentoring, and leadership, you will empower your colleagues to deliver personalised service with confidence while supporting their professional growth.
- Working closely with the Head Chef and wider hotel teams, you will help shape the restaurant offering, deliver seasonal experiences, and ensure The Montagu Kitchen continues to attract both hotel guests and local diners.
- You will also oversee financial performance, labour planning, stock control, and cost management, balancing operational excellence with strong commercial results while maintaining the highest standards of quality.

About You
You are an experienced Restaurant Manager with a background in luxury hotels, premium restaurants, or both, and you understand what it takes to deliver consistently exceptional dining experiences. You combine outstanding operational knowledge with commercial awareness and are equally comfortable leading a busy service, developing your team, and driving business performance.
- A natural leader with a visible presence on the floor, you inspire confidence through your professionalism, positive attitude, and attention to detail.
- You know how to motivate people, set high standards, and create an environment where both colleagues and guests feel genuinely valued.
- You are passionate about hospitality, highly organised, and committed to delivering excellence in every aspect of the guest journey.
