Role: Restaurant Manager
As Restaurant Manager, you will lead one of The Chancery Rosewood's most vibrant and high-profile dining destinations, a fast-paced luxury café outlet serving a significant volume of guests each day. This is a Head of Department position, reporting to the Director of Food & Beverage, you will take full ownership of the outlet's operational and commercial success, ensuring exceptional guest experiences, strong financial performance, and a culture where associates thrive.
This is a role for a highly visible and hands-on leader who is energized by high-volume operations and passionate about delivering excellence at scale. You will balance strategic thinking with operational expertise, leading from the floor, developing talent, driving revenue, and creating an environment where guests return time and time again. Key Responsibilities
- Lead the strategic and day-to-day operation of a high-volume luxury café outlet, ensuring seamless service delivery, exceptional guest satisfaction, and consistent achievement of operational and financial objectives.
- Take full ownership of the outlet's commercial performance, managing revenue, labor costs, stock control, forecasting, budgeting, and profitability to achieve monthly business targets.
- Maintain a strong presence on the floor, building meaningful relationships with guests, handling feedback and concerns professionally, and ensuring every guest receives an engaging and memorable experience.
- Lead, inspire, and develop a large front-of-house team through effective recruitment, onboarding, coaching, performance management, and succession planning, creating a culture of accountability and excellence.
- Collaborate closely with Culinary, Bars, Revenue, Marketing, and other hotel departments to deliver innovative offerings, promotional initiatives, and operational improvements that enhance both guest experience and commercial performance.
- Analyze guest feedback, market trends, business performance, and trading patterns to identify opportunities to drive covers, revenue growth, productivity, and operational efficiency.
- Oversee workforce planning and rota management, ensuring the outlet is appropriately staffed to meet fluctuating business demands whilst maintaining productivity and service standards.
- Ensure all aspects of the operation consistently meet Rosewood standards relating to service, presentation, food safety, health & safety, cleanliness, and compliance.
- Act as an ambassador for Rosewood Hotels & Resorts, championing the company's values, culture, and commitment to relationship hospitality whilst fostering a positive and inclusive working environment.
- Maintain the highest standards of confidentiality in all matters relating to guests, associates, and business operations, ensuring compliance with company policies and statutory requirements.
