We are looking for a passionate and driven Restaurant Manager to lead the operation of Hugo’s Restaurant, The Atrium, and Poolside Drinks Service. This is a fantastic opportunity for an experienced hospitality professional to take ownership of multiple vibrant service areas and deliver exceptional guest experiences.

About the Role

As Restaurant Manager, you will oversee the day-to-day running of Hugo’s and associated outlets, ensuring outstanding service, strong financial performance, and a highly engaged team. You’ll play a key role in shaping the guest experience, driving standards, and supporting the ongoing success of our Food & Beverage offering.

Operations

  • Leading the daily operation of Hugo’s Restaurant, Atrium Lounge, and Poolside service
  • Delivering exceptional guest experiences through high standards of service, quality, and presentation
  • Working closely with kitchen and bar teams to ensure seamless service delivery
  • Responding proactively to guest feedback and continuously improve service standards
  • Supporting the development and execution of events, promotions, and new initiatives

Leadership & Team Management

  • Inspiring, leading, and developing a high-performing F&B team
  • Managing recruitment, onboarding, training, and performance
  • Creating and managing rotas to ensure effective and efficient staffing
  • Conducting regular team meetings and performance reviews

Financial Performance

  • Managing budgets, costs, and stock control to maximise profitability
  • Supporting the delivery of revenue and profit targets
  • Monitoring sales performance and implement strategies to drive growth
  • Ensuring compliance with purchasing and financial procedures

Training & Development

  • Identifying training needs and implement development plans
  • Ensuring all team members are fully trained and supported in their roles
  • Maintaining accurate training records and compliance standards

Health & Safety

  • Ensuring full compliance with food safety, licensing, and health & safety legislation
  • Maintaining high standards of hygiene, cleanliness, and safety across all outlets
  • Completing risk assessments and ensure team awareness of safety procedures
  • Promoting a safe and positive working environment

About You

  • Have proven experience in a restaurant or F&B management role
  • Have excellent leadership and people management skills
  • Be commercially aware with experience managing budgets and costs
  • Be passionate about delivering exceptional guest experiences
  • Have excellent communication and organisational skills
  • Have knowledge of health & safety and food hygiene regulations

Additional Information

  • 45 hours per week
  • Working 5 out of 7 days per week (including evenings, weekends and bank holidays)
  • Salary: £37,000 per annum
  • Please note that we are unable to offer visa sponsorship for this role. Applicants must have the legal right to work in the UK and not require future sponsorship
