About the Restaurant

Roketsu is a contemporary Japanese dining destination in Marylebone, rooted in Kyoto hospitality. It offers a customised kappo-style experience, featuring an open kitchen and counter seating that invites direct interaction between chef and customer.

The Role

We are seeking a Restaurant Manager / Sommelier to lead front-of-house operations and curate the restaurant’s wine and sake programme. The ideal candidate will have a deep understanding of authentic Japanese cuisine, shaped by Japanese chefs.

Key Responsibilities

  • Lead, mentor, and support the front-of-house team
  • Deliver a seamless and refined guest experience
  • Develop and manage the wine and sake offering
  • Provide pairing recommendations and training to the team
  • Oversee reservations, inventory, and supplier relationships
  • Maintain a welcoming and attentive service environment

About You

  • Proven experience in restaurant management or a senior front-of-house role
  • Genuine interest in wine, sake, and Japanese beverages (deep expertise can be developed)
  • Experience in Japanese or Asian dining is advantageous
